White Tea
White tea is made from a young tea bud. It's picked just before the leaf on the stem opens up and is air dried to preserve its colour and taste. Chlorophyll in the bud is not yet mature, therefore the leaf gets a "white" appearance. It has a very delicate body, so more large buds should be used to achieve full taste. There is no reason to add milk or sugar to this simple, pure tea, it is excellent in itself. It contains both caffeine and healthy polyphenols.
